  • 24gr flour 00
  • 100ml water
  • 120gr olive oil
  • Gel food coloring (various shades of pink, orange, and red)
  • heat-resistant gloves


  • Heat-resistant silicone mat or parchment paper
  • Heat-resistant spatula, spoon or tweezer
  • Sauce pan
  • Plastic squeeze bottle (for precision)

Step 1: Prepare Your Work Area

Lay down a heat-resistant silicone mat or parchment paper on your countertop to prevent preparation from sticking. Put on heat-resistant gloves to protect your hands during the process.

Step 2: Prepare the flour Mixture

In a blender, combine all the ingredients together to allow a perfect match and combine each ingredient smoothly. Blend them for 5min (suggestion)

Step 3: Pour your mixture inside a plastic squeeze bottle.

Step 4: Create Texture

To mimic the texture of real coral, heat your hob to 700 power. Pour your mixture from the squeeze bottle and use a heat-resistant spatula or spoon to gently press and shape the sugar droplets while they’re still warm. This will create the intricate, branching patterns characteristic of coral, please be patient, as a lot of oil will be released from the mixture.

Step 5: Get the coral from the pan

Once you have removed your coral from the pan, please dry off and remove the leftover oil.

Step 6: Allow to Cool

Let your coral edible garnish cool and harden completely. This should take about 5-10 minutes.

Step 7: Garnish Your Cocktail

Once your coral garnishes are cool and solid, carefully remove them from the silicone mat. They are now ready to adorn your cocktails! Place them delicately on the rim of your glass or float them on top of your drink for a visually stunning presentation.
